Spanish Rice

Ingredients
3 tbs Butter or Oil

1 medium Onion

1 medium Green Pepper

1 lb Chopped Beef

Salt, Pepper, Paprika to taste

2 cups Tomato Sauce

1 cup Carolina Rice

1 small can Corn (drained)

1 small can Peas (drained)


 
Preparation
Brown Ground Beef into small crumbles, season with Salt and Pepper (Garlic and Lemon-Pepper can be used also) to taste.
Drain Ground Beef and set aside.
Chop up Onion and Green Pepper.
Heat Butter in pan 
Add Chopped Onion and Green Pepper, Cook 5 to 7 minutes or until soft.
Add Ground Beef.
Add Rice, Stir around.
Add 2 cups of tomato Sauce and about 1/4 cup water.
Bring to a boil then lower heat and
Simmer 20 to 30 minutes or until the rice is just becoming "al-dente".
Just before Rice is done, add Corn and Peas.
Simmer another 10 to 15 minutes to heat up Corn and Peas.
While Simmering, Season with Salt, Pepper and Paprika to taste.

 
Serving Suggestions
Serve with Italian or French Bread and a tossed salad.
